Eggplant contain sugar, protein substances, mineral salts. That is why in the winter period, they are indispensable in their nutritional qualities, and in combination with meat dishes are very useful.

Products:

400 grams of eggplant;

200 grams of onions;

400 grams of tomatoes;

2 fruits of sweet pepper of medium size;

Juice 1 lemon and zest;

Salt to taste;

3 tbsp. l. Raising. -go oil

Cooking:

Finely chop the onion. Rinse the eggplant, peel, cut into circles, sprinkle with salt and leave for 20 minutes;

After that, rinse them again, squeeze them slightly from the water and fry them in vegetable oil along with onions;

Add tomatoes chopped in circles, peeled sweet pepper, salt, pepper to taste, pour lemon juice, add lemon zest and mix. Garnish with tomatoes and twigs of greens.
